The ramen here is incredibly well-crafted and harmonious.**What I ordered:** - Premium Raa Men (Shoyu) JPY 2000 - Grilled Pork Rice JPY 450 The Premium Raa Men comes with the following toppings: - 3 types of chashu (braised pork) - Meat wontons and shrimp wontons - Kujo green onions - Shredded menma (bamboo shoots) - Soft-boiled egg - Nori (seaweed) **Chashu:** Each type allows you to savor the natural flavor of the meat while harmonizing beautifully with the broth. All three types have distinct flavors, making it a fun experience. 1st type: Perfectly thin, tender, and sweet fat. It melts in your mouth. 2nd type: Herb-like flavor, slightly refreshing. 3rd type: Thick, with a great balance of meat fibers and fat. It’s moist yet has a nice chew to it. Not tiring at all. The aroma of the grilled meat and pepper is delightful. **Noodles:** Slippery, straight, and on the softer side. The wheat flavor is subtle, serving as a medium to enjoy the broth. I prefer a stronger wheat flavor, but the harmony between the noodles and broth was excellent. **Menma:** There wasn’t much, not enough to really taste it. Its presence was too faint. But perhaps this ramen doesn’t need a strong menma flavor. **Soft-boiled egg:** Average. The yolk was about 80% firm and 20% runny. **Wontons:** The meat had a nice bounce to it. One of them had a good amount of finely chopped shrimp. Hmm, both the meat and the skin were just average? **Nori:** I appreciated the thoughtful presentation that keeps the nori from soaking in the broth. **Broth:** Delicious! With every sip, the umami hits you! Not just the first sip, but every time you drink it, the umami comes through! The flavor is completely different from typical shoyu ramen. As mentioned in other reviews, it might be a bit stronger in soy sauce flavor. I felt quite thirsty after finishing, but I actually prefer it with this punch. Honestly, I might want some pepper for a flavor change. Haha. Also, I wish there were a bit more green onions. The Kujo green onions paired excellently with the soy sauce broth. Additionally, there was more oil than I expected. **Grilled Pork Rice:** The chashu from the ramen was generously piled on, sprinkled with long green onions, and topped with an egg yolk. The sauce was mild. Hmm, it was more ordinary than I expected... However, since the chashu itself is incredibly delicious, it might be perfect for when you want to enjoy chashu with rice! I thought JPY 2000 was a bit pricey, but it might be worth it considering the quality and experience. I’m not an expert on ramen, but I think I could do without the premium option. I had heard that the quality of the toppings was exceptional, so I tried the premium, but I didn’t really appreciate the wontons and soft-boiled egg. However, the chashu and broth were exceptionally delicious. I understand now that this is the perfect bowl crafted by the chef. It was a wonderful experience. The more I think back on it, the more I realize how delicious it was. I feel a bit regretful and want to eat it again! Haha. It’s a bit far and only open on weekdays, so it’s challenging. I was also curious about the grape pepper ramen, but it was sold out. What a shame! ☹☹☹ I’d like to try it next time. When I was leaving, the chef greeted me with a smile and said thank you. He seemed like a genuinely nice person. Also, the background music was quite mysterious.
