My first experience with rock oysters at L'evo was unforgettable. The natural rock oysters, freshly caught in Shinminato, Toyama, are in season right now—plump, creamy, and bursting with rich flavor. Inside the large shell, there were tear beans and whey sauce, which paired perfectly with the oysters. I enjoyed my stay and savored some delicious wine, making the most of my time at L'evo.
