I had the wonton shio ramen and the tsukemen (soy sauce).The wonton shio ramen featured a beautifully clear broth, rich in umami from carefully extracted flavors of jidori chicken, various dried ingredients, and seafood.The tender chashu had a deep meaty flavor, while the wontons had thin, smooth skins filled with a generous amount of filling, creating a delightful presence.The tsukemen (soy sauce) was aromatic and sweet even when eaten on its own, showcasing the wheat flavor.After enjoying the noodles with sea salt and sudachi, dipping them into the rich sauce, which was concentrated with deep soy sauce flavor and umami from seafood and meat, transformed the taste into something bold and powerful.The dipping sauce was rich but did not overpower with saltiness, allowing me to savor the layers of umami until the very end.
