Located about a 20-minute walk from Yaizu Station in Shizuoka, this restaurant is a Tabelog GOLD establishment and one of Japan's top Japanese cuisine spots.Upon entering, you walk through a garden-like path leading into the restaurant. The calm atmosphere of the counter seats offers ample space for a relaxed dining experience.The course features local seafood primarily sourced from the Sasue Maeda Fish Shop. The freshness of the fish is exceptional, and the seasoning is gentle. Despite the generous portions, you won't feel overwhelmed, allowing you to enjoy every bite until the end. Not only the fish but also the dishes made with local vegetables were delightful, and even the dessert, jade rice cake, was incredibly delicious. This was my first visit, and while I had heard it was good, it exceeded my expectations. I usually believe that meat isn't necessary in Japanese cuisine, but they presented it in a way that was surprisingly wonderful.The cost-performance is outstanding; I had two beers and two cups of Japanese sake, totaling just under JPY 30,000. This is less than half the price of some other Japanese restaurants that have recently raised their prices.Although it's a bit difficult to reach from Kansai, it's a place I would want to visit again and again.It was a great meal.Today's Course (✅: Favorite)- Grilled Yaizu Jindou Squid with Charcoal, Squid Ink Salt, and Mustard The texture is sticky even without being pounded, and the saltiness is exquisite, enhancing the sweetness with a light char. Jindou squid may seem small, but the flesh is thick.✅ Yaizu Mackerel Sushi Despite the season, the flesh is thick and rich in fat.- Barracuda with Green Onion and Molokhia The barracuda is plump, and the broth has a gentle flavor.✅ Yaizu Sweetfish, Shiitake from Fujieda, and Garden Yuzu The sweetfish is incredibly tender and flavorful, with a nice texture around the skin. The shiitake mushrooms are also rich in umami, and the broth is primarily kombu, ensuring it doesn't overpower the sweetfish's taste.✅ Freshly Caught Bonito Sashimi An 8kg bonito that was hard to believe from just looking at the cutting board. It features two parts: the liver and the flesh. The liver is sprinkled with sesame, and its freshness means there's no unpleasant odor, making it very delicious. The flesh has a strong umami flavor typical of summer bonito, rather than being overly fatty.✅ Fried Green Eggplant with Miso The batter is light and crispy, while the eggplant inside is creamy. The white miso pairs perfectly without being too rich, but it’s also delicious with just salt.✅ Aichi Hamo (Pike Eel) with Winter Melon The hamo from Yaizu has tough bones, so they used Aichi hamo, which is soft in texture and rich in flavor. The winter melon cooked in broth is also delicious.- Collin's Pumpkin with Sesame Vinegar This pumpkin is meant for raw consumption, with a refreshing taste and light sesame vinegar, making it a perfect palate cleanser.- Grilled Eel Wrapped Combined with sansho pepper and burdock, the homemade doubanjiang is delicious even without wrapping.- Yam Noodle with Quail Egg- Ginger Rice with Simmered Vegetables The ginger aroma is incredibly fresh, and it has a perfect balance of refreshing flavor without any spiciness.✅ Yaizu Ebodai and Orido Eggplant (Traditional Shimizu Vegetable) The flesh of the ebodai is so fluffy that it falls apart easily. The broth is light, and the soy sauce is subtle, allowing you to appreciate the delicate flavors of the ebodai and eggplant. The cooking of the okra in the simmered dish is perfect.✅ Yaizu Hamo Minced with Sweet Manganji Mixed Rice and Miso Soup The hamo has a strong flavor and is sourced from Yaizu, while the rice is Nikomaru from Makinohara. It’s delicious on its own, but adding the egg yolk soy sauce enhances the richness. You can get a refill, but I had to pass since more rice was coming.✅ Fresh Shirasu Rice Freshly caught shirasu rice in the morning. Absolutely delicious.✅ Chilled Sesame Dashi Chazuke Topped with myoga, shiso, and ginger, the sesame dashi is refreshing, and combined with the herbs, it’s easy to eat even when full.- Peach with Hamagou Syrup and Black Tea Jelly✅ Zunda Jade Rice Cake The edamame is incredibly rich, and the contrast between the crunchy texture of the beans and the creamy outer layer was fantastic, leaving a lasting impression until the end of the course.- Matcha
