In early May, I went out for dinner with a friend.After visiting Chiso Nishikenichi and Onishi, we arrived at our third stop on our tour of Shizuoka's renowned restaurants: Japanese Cuisine Fuji.This restaurant also focuses on seafood, using fish from Maeda Sasu Fish Shop.Compared to Onishi, the flavors here are more subtle and introspective. Rather than being bold and straightforward, the tastes gradually seep in, creating a gentle yet profound experience. While it may not be flashy, those familiar with Japanese cuisine will surely appreciate the delicate umami and depth of aftertaste that this restaurant offers.**Ika (sardine) with Urui and Sardine Innards Sauce** The overall balance of bitterness and sweetness is delightful, and the urui has no unpleasant grassy taste. This dish is personally one of my favorites.**Ise Lobster Miso with Seaweed and Rice** The cooking of the Ise lobster is excellent. Instead of an overwhelming flavor, it offers a gradual release of umami with each bite.**Jindo Squid with Onion Leaves and Soy Sauce Koji** The pairing with soy sauce koji is outstanding and very delicious.**Hanadai Soup** The sweetness of the beans is beautifully pronounced, and the aroma of katsuobushi is rich. The hanadai has a solid umami and retains a pleasant texture.**Hirama (Japanese amberjack) with Aori Squid and Bracken** Both have a strong sweetness, and the texture of the hirama is exceptional. Personally, I preferred it with salt rather than soy sauce.**Grilled Shiro Amadai with Shiro Amadai Broth** The cooking is remarkable, maintaining a fibrous texture without being dry at all. The broth also extracts the fish's umami beautifully, which I really enjoyed.**Red Moon (sweet potato) with Snap Peas and Sesame Dressing** The aroma is simply wonderful. The sesame is ground and warmed on the spot, creating an overwhelming and irresistible roasted flavor.**Unagi from Lake Hamana with Fava Beans** There is absolutely no muddy taste, and the sauce is lighter than typical eel sauces. The overall quality is very high.**Aji (horse mackerel) with Aji Soft Roe Sauce, New Onion, and Daikon** So delicious it was shocking.**Kuro Mutsu (black mutsu) with Kikukawa White Asparagus and Yuzu Pepper Miso** This was also outstanding. The freshness and fat of the kuro mutsu were wonderful, and the yuzu pepper miso was truly exquisite.**Pea Rice** **Simmered Kinmedai Rice** **Zosui (rice soup)** **Warabi Mochi (bracken starch dumpling)**
