I had been curious about Unagi Uomasa for a while and had visited several times, hoping to try their natural eel if it was available on the day. This time, however, I made a proper reservation before my visit.Unagi Uomasa has a great reputation and is conveniently located just a short walk from Yotsugi Station on the Keisei Line, making it very accessible by train. I started my meal at 12:30 PM.I ordered the Special Whole Eel for JPY 7,700 and the liver soup for JPY 300 (total JPY 8,800, tax included). The price included crispy eel bones and liver wasabi, which were served on a small plate at the beginning. The crispy eel bones were freshly fried, and the liver wasabi featured fresh liver served with wasabi soy sauce. It was a delightful prelude to the main dish, heightening my anticipation. Before long, my unaju arrived. The red lacquered box was quite striking. Upon opening the lid, I was greeted by the enticing aroma of perfectly grilled eel.I restrained my eagerness and started with the liver soup, which was simple with mitsuba (Japanese wild parsley) and fu (wheat gluten). The broth was well-balanced and very good. Now, how would the eel taste? The eel was cut open in the Kanto style and grilled with a slightly stronger char. However, the unique smokiness from the charcoal grilling was irreplaceable. The sauce had matured, enhancing its flavor. The balance of steaming and grilling created an exquisite harmony that truly exemplified what unaju should be. I thoroughly enjoyed my meal. Payment by card is also accepted. It was a great meal!
