Founded in 1984 by Akira Inoue, a leading figure in the Japanese French cuisine scene, Chez Inno is a prestigious grand maison located in Kyobashi, Tokyo. The interior, adorned with beautiful stained glass, exudes a sense of warmth while maintaining a grand atmosphere, making you feel like a special moment begins the instant you take your seat. Lunch is half the price of dinner, which fills up the reservation slots quickly, but I was finally able to visit again after a long time.The amuse-bouche was "Melon Mousse with Prosciutto-flavored Consommé Jelly." This dish features a smooth and fragrant melon mousse layered with a consommé jelly infused with the umami of prosciutto. The bits of melon hidden within the mousse add a refreshing texture. This classic combination of melon and prosciutto is elegantly transformed into a light and sophisticated dish.Next came the terrine, showcasing the beauty characteristic of Chez Inno. On one side, there was a seafood terrine layered with scallop mousse and anago (conger eel). The fluffy texture allows the rich flavors of the sea to unfold beautifully. On the other side, a terrine of duck and foie gras combines the robust taste of duck with the creamy richness of foie gras, all tied together with a fragrant jelly. The charm lies in being able to compare two distinctly different terrines—one seafood and one meat—on a single plate.A summery dish followed: "Chilled White Corn Soup with Popcorn."This chilled potage is remarkably rich and smooth, concentrating the natural sweetness of white corn. The addition of popcorn brings a toasty aroma, a light texture, and just the right amount of saltiness, enhancing the sweetness of the corn.Then came the main course, an upgraded version of Chez Inno's signature dish: "Lamb Pie Baked in the Style of Maria Callas." ✨ This dish features tender lamb meat combined with foie gras, truffles, and mushroom duxelles, all wrapped in a flaky pastry and baked to perfection. As you cut into the pie, the rich aroma of lamb and foie gras wafts out. The delicate umami of the lamb, the deep richness of the foie gras, and the elegant fragrance of the truffles come together beautifully. These flavors are unified by a glossy sauce Périgueux, creating a layered and profound taste experience. It is powerful and dense yet leaves no heaviness behind. The careful cooking and the sauce that enhances the ingredients' appeal allow you to fully enjoy the essence of classic French cuisine in a single dish.The course concluded with a dessert cart. You can choose from beautifully arranged compotes and tarts, and the joy of deciding which to pick adds to the experience, allowing you to sample several varieties in small portions. At Chez Inno, you can feel the long-standing aesthetic of a grand maison in every aspect: the food, the ambiance, and the service.
