Reservations start at 11:00, and it takes about an hour and a half to drive from Tokyo to Yugawara.Without hesitation, I ordered the "Shio" (salt) ramen and "Tsukemen" (dipping noodles).I couldn't help but notice every move made by the chef at Iida Shoten; everything was done with impressive speed, and all unnecessary elements were stripped away.In front of me was the "Shio Ramen," which had a much stronger pork flavor than my last visit, and it was delightful. The freshly cut white leeks added a wonderful presence, and the texture of the noodles was, as always, exceptional.I finished it in no time. Then came the Tsukemen. Can this dish even be categorized as Tsukemen? The richness of the dipping sauce was unlike anything I had ever tasted before—it blew my mind! With various flavors and a luxurious feel akin to a course meal, it felt like everything was perfectly encapsulated in this dish.Every visit is truly remarkable.Next time, I’ll definitely have to enjoy another round inside the restaurant. The Tsukemen is a must!
