I occasionally visit Wine Bar La Fête, but I always come to Kochuten for special occasions.I wish I could come more often, but timing just doesn’t work out.Ah, I really love this place.The wine selection is perfect, and the timing of the dishes and drinks, along with the staff's smiles, everything is just flawless.Starting with the amuse-bouche, it’s wonderful.The classic pâté and the vibrant gazpacho are simply the best.Then there’s the prosciutto and bouillon; serving this bouillon is truly impressive!The appetizer of consomme jelly, lobster, and sea urchin has a quality that seems common yet is truly unique.The dish featuring sweetfish has a rich flavor that comes from the sweetfish bisque, with a nice balance of bitterness and citrus acidity, and the texture of the kadaif is delightful. Pairing this with red wine? Wow, this is incredible!The managatsuo is fluffy and thick, with a crispy skin. Is it saffron and americane? Or bouillabaisse? The umami is strong, and the aroma is just amazing!For the finale, we had lamb, perfectly cooked, with just the right amount of salt that doesn’t overpower the ingredients.The sauce, is it jus d’agneau? The aroma is fantastic, and the caramelized carrots are sweet and delicious.Of course, the cutlery is pleasantly warm, making me feel like I’ve truly arrived.For dessert, we had watermelon sorbet and salted milk ice cream—there are no words to describe it.Next was apricot with raspberry sauce and a custard pastry. The aroma of this custard is incredible; I wonder if the sugar is something special?Finally, wow, is that Ducasse? Oh no, I can’t handle it!I was knocked out by the best experience.This feeling is priceless.
