The restaurant is located a moderate walk from Jingumae, and at first glance, I wondered if I was at the right place. It wasn't until I saw the name sticker on the door that I was sure.The interior was more casual than I had imagined! The staff provided wonderful service and guided me to my seat.I started with a beer, and the first dish was a "Monaka".It had a Japanese sweet-like appearance, but the crispy texture of the Monaka combined with a hint of saltiness and richness, along with some sweetness, created a wonderfully complex flavor. The unusual combination of truffle and "Zunda" (sweet edamame paste) exceeded my expectations right from the first dish.Next was the Corn Tofu, made from corn and resembling sesame tofu. The gentle natural sweetness of the corn, combined with the richness of the sauce and a slight acidity, evoked a refreshing summer flavor.Then came the DFC (Den Fried Chicken). The box reminded me of a chain often thrown into Dotonbori, and inside were perfectly round, plump chicken wings. They were hot and crispy, filled to the brim with delicious stuffing. The perfect saltiness and aroma of Japanese flavors were fantastic. Inside, they had rice and sweetfish, showcasing impressive skill and creativity.Next was the sashimi, featuring fresh sea bream marinated to perfection, with a pleasantly sticky texture and rich umami flavor—perfect with Japanese sake.Then came the grilled pork, cooked just right, tender, and deeply flavorful. You could really taste the care and attention that went into its preparation.A salad was served next, and surprisingly, this salad was incredibly well thought out. Each vegetable was prepared and seasoned differently, showing the immense effort that went into this single dish. With each bite, I discovered new textures and flavors in this delightful salad.The gentle flavor of the broth, accompanied by shrimp dumplings and winter melon, was heartwarming. Each bite brought a comforting taste, making me reluctant for the course to end.Finally, there was rice with tempura of anago (conger eel), pickles, and miso soup. Even when mixed, the tempura retained its crispiness, and the miso soup had a strong presence without being overpowering. Ah, I could eat this for breakfast every day...To finish, there was a dessert of peach and yogurt ice cream, which provided a refreshing balance of acidity and sweetness.This place not only offers excellent food but also outstanding service. The staff pays close attention to the customers, providing thoughtful service in terms of food delivery, explanations, and drink suggestions, showcasing true hospitality.It's no surprise that this restaurant has a high quality that justifies its Tabelog Silver rating.
