A representative French restaurant in Japan, I had a special time at "Quintessence" in Gotenyama.✨I visited Quintessence located in Shinagawa, Gotenyama. It opened in Shirokane in 2006 and relocated to its current location in Garden City Shinagawa Gotenyama in 2013. Currently, it only offers an Omakase course and has been recognized with the Tabelog Award 2026 Silver and selected as one of the Top 100 French Restaurants in Tokyo 2025.The entrance features a very simple design with the restaurant's name, "quintessence," quietly displayed. There are no flashy decorations; rather, this modest appearance heightens the anticipation for the meal to come.The interior is calm and has a different impression from the typical lavish high-end restaurants. It creates an atmosphere that encourages guests to focus on the dishes themselves.A significant feature of Quintessence is that it is structured solely around the Omakase course, rather than offering an à la carte menu. This style has been adopted since its opening, allowing them to prepare only the necessary ingredients in the required amounts, which helps reduce food waste.While I regret not being able to detail the dishes, I was impressed by how every aspect of each plate—ingredients, cooking techniques, seasoning, and temperature—was meticulously considered. It felt like they were pursuing how to present the ingredients in the most delicious state within the framework of French cuisine.What stood out to me was not just the dishes themselves, but the overall flow of the course. Each plate is not isolated; rather, the connections between the dishes and the lingering aftertaste create a complete experience, which is why it is called a renowned restaurant.The current operating hours are Tuesday to Saturday from 17:00 to 23:30, with two seatings at 17:00 and 20:30.
