I made a reservation for August at midnight on June 1st.Of course, I couldn't take a holiday, so I managed to secure a spot on a weekday.I took a day off work to visit, haha.I was worried about parking, so I arrived around 11:30.The road between the restaurant and the parking lot is quite narrow, and it seemed challenging to park if there were other cars already there.Fortunately, I was the first to arrive and parked without any issues.At 11:45, the staff came to call us in.Once inside, it seemed like all the other customers were regulars.We were the only first-time visitors, which indicates a high repeat rate.The course meal began with a greeting from the owner, featuring local seafood from Yaizu.The freshness was outstanding.Everything was incredibly delicious.What stood out the most were the horse mackerel cucumber rolls and the Nodoguro (blackthroat seaperch) that were served first.Being served such delicious dishes right away raised our expectations significantly, haha.The Nodoguro was particularly amazing.It had a rich flavor when it hit my palate, with a firm exterior and a fluffy texture inside.It felt almost like eating foie gras.Since we were seated at the counter, we could see the entire process from cooking to plating right in front of us.It was like a live performance.Not just the owner, but also the assistants moved with such efficiency that it was a pleasure to watch.I enjoyed not only the food but also the artistry of their work.And finally,I felt a sense of "ichigo ichie" (a once-in-a-lifetime encounter) when the owner bowed deeply to see us off.I wonder if this is what the "Cha Kaiseki" in the restaurant's name refers to.Making a reservation is quite challenging, but I definitely want to come back again and again.Taking a day off work was worth it, haha.It was a great meal!
