I made a reservation at 8 AM the day before my visit. I was really happy to finally be able to go to a restaurant I had wanted to visit for a long time. I ordered the special Shoyu Ramen and the Koro Chashu Rice. Unfortunately, I couldn't add any extra toppings. The Shoyu Ramen had a rich, deep soy sauce flavor with a complex broth that highlighted each ingredient beautifully. The chashu included various cuts like thigh and belly, providing a satisfying bite. The noodles were medium-thin and straight, with a delightful wheat flavor. One thing I noticed was a slight sour aroma and bitterness from the rare chashu, possibly due to insufficient dehydration during smoking. Everything else was perfect, so that was a bit disappointing. I would love to try the kombu water tsukemen and other ramen options as well. Overall, it was delicious!
