The course I enjoyed this time embodied the concept of **"as flexible as water and as clear as white"**. The deep commitment to the dashi (broth), starting from the careful selection of water, was evident throughout the meal. While maintaining a strong foundation in traditional Japanese cuisine, the creativity shone through with the natural incorporation of Western ingredients such as truffles, caviar, and foie gras.
