I visited Sushi Saitou for the second time, this time enjoying the lunch omakase course.The quality of the ingredients was truly impressive. From seasonal appetizers to the nigiri, each dish showcased meticulous craftsmanship, allowing me to genuinely appreciate the quality of the ingredients. There’s a comforting sense that they focus on perfecting the classics rather than chasing trends.The atmosphere inside the restaurant is calm and pleasant, with just the right distance between the diners and the chefs. It strikes a balance where you don’t feel overly tense, yet you can still savor the special experience.The skill that captivated food enthusiasts worldwide during its Michelin three-star era is still very much present today. I highly recommend this place for those who want to quietly enjoy excellent sushi without being swayed by trends. I look forward to visiting again in a different season.
