To start, the freshly shaved bonito flakes, prepared in front of us, released a vibrant aroma that pleasantly stimulated my sense of smell, making me feel a different level of quality. The umami of the dashi broth was also memorable, as it seemed to dance on my tongue. It was a delicate flavor that stood out compared to the dashi from Hiroshima's Chiso Suttaku. The mid-course Nodoguro, with its crispy skin and rich fat, left an unforgettable impact. It seems they maximize the umami of the highest quality ingredients while employing clear and effective cooking techniques.
