This was a refined course that beautifully fused authentic French culinary techniques with Japan's wonderful ingredients. Every dish was truly delicious, and I was continuously impressed!- Gazpacho The sweet flavor of cold muscat grapes made for a refreshing and elegant start, perfect for the hot season.- French Land Squab The meat of the squab was surprisingly tender and juicy. I was handed a piece to enjoy in one bite, and the yolk from the quail egg burst in my mouth.- Yaizu Meigo This dish showcased the rich flavor of fresh Yaizu Meigo. The delicate cooking technique resulted in a fluffy texture.- Yaizu Bonito This was the highlight! The bonito from Yaizu was rich in fat and had zero fishy taste. The sauce complemented it perfectly, making it delicious.- Scallops and Surf Clam The sweetness of the enormous scallops contrasted beautifully with the textures of the surf clam and honeycomb tripe.- Yaizu Ribbonfish The ribbonfish was rich in fat, with a crispy and fragrant skin.- French Bigorre Pork Chuck Eye Roll The Noir de Bigorre chuck eye roll was rich in flavor, tender, and juicy.- Hairy Crab Pasta The rich flavor of hairy crab clung beautifully to the pasta, creating a luxurious dish. The taste of crab filled my mouth with happiness.- Young Ginger, Pineapple / White Peach, Vanilla Beans A refreshing dish that felt like an appetizer before dessert. The sharp aroma of young ginger paired perfectly with the natural sweetness of pineapple and white peach.- 30-Month Aged Comté Cheesecake The deep richness of aged Comté cheese combined with the smooth texture of the cheesecake was outstanding. It wasn't overly sweet, making it suitable for adults.- Financier / Truffle Chocolate The financier, baked right in front of me, was rich in buttery aroma, crispy on the outside and moist on the inside. The truffle chocolate was fragrant, and when I took a bite, the juicy chocolate inside filled my mouth with happiness.Overall, the meticulous work that maximized the individuality of the ingredients, along with the warm service, made for a highly satisfying meal. Be sure to come with a good appetite, as you'll leave quite full. This is a restaurant I definitely want to visit on a special day in Kagurazaka. I look forward to returning!
