Located in the heart of Matsuyama City, Ehime Prefecture, this sushi restaurant has been on my radar for a long time, and I finally got to fulfill my wish to visit.They offer two types of courses for lunch and dinner: one featuring only nigiri and another with appetizers and nigiri. This time, I chose the nigiri-only course for lunch in mid-May. Here’s the menu:- Simmered Octopus- Spring Child (Nihonbashi)- White Sweetfish (Hachimanbama)- Marinated Chicken Fish (Ainan Town)- Seared Bonito (Imabari)- Young Horse Mackerel (Amakusa)- Swordtip Squid (Hachimanbama)- Horse Mackerel (Sanbe Town)- Marinated Tuna- Sweet Shrimp- Conger Eel- Matsuyama Fried Tofu- Young Horse Mackerel (additional)- Dried Gourd Roll (additional)- EggAt Sushi Ino, they primarily serve local seafood from Ehime. For travelers, it’s a delight to enjoy so many local specialties. The chef’s refined and honest technique really brings out the potential of the sushi ingredients. Personally, I found the vinegared rice to be perfectly balanced. The acidity was just right, and each bite of sushi had a refined aroma that enhanced the flavors of the toppings.The Ehime fish, such as Spring Child and White Sweetfish, are caught in areas where I rarely have the chance to eat them, so I enjoyed the distinct flavors and had a wonderful time.Although not from Ehime, the Young Horse Mackerel left a particularly strong impression on me. It was well-marinated, bursting with acidity and umami, making it one of my favorites. Additionally, the Sweet Shrimp was cooked perfectly; the surface was firm while the inside had a medium-rare, tender texture. The sushi made with Matsuyama Fried Tofu was also original and delicious.This is definitely a place I want to visit again when I return to Ehime.
