I managed to secure a reservation on a weekday. This was my long-awaited visit to Iida Shoten. It completely exceeded my expectations. The appearance suggested it might be rich, but the broth was incredibly concentrated with chicken flavor, to the point where I felt like I was drinking the yolk. It's fascinating to think that this is all made by hand.
