Located in Shinagawa, Gotenyama, Quintessence is a top-tier French restaurant that has consistently earned three Michelin stars in the Tokyo guide. ✨ The restaurant is characterized by its thorough pursuit of three elements: "ingredients," "cooking technique," and "seasoning," crafting a course based on the finest ingredients available that day. It is a renowned establishment that attracts food enthusiasts from around the world. Each dish showcases delicate flavors that highlight the individuality of the ingredients, including a rich soup concentrated with the umami of sweet shrimp, the signature goat's milk bavarois, eggplant with caviar, tartare of brioche and squid, and Wagyu ham. Each plate offers a unique expression, making the entire course a delightful experience. I was particularly impressed by the Mackerel. The exquisite cooking technique resulted in a plump and moist texture, with an astonishingly tender mouthfeel. The fish's inherent refined umami was maximized, and it paired perfectly with the accompanying mushroom sauce. This dish truly showcased the chef's exceptional skill and was the highlight of my meal. The main course, lamb from Rozer in France, was also perfectly cooked, allowing me to fully enjoy the rich flavor of the lamb. For dessert, the cacao sorbet, Nagano purple grape and plum pie, and meringue ice cream were all meticulously crafted, providing a pleasant conclusion to the course. Each dish reflects a commitment to quality ingredients and technique, making it clear why this restaurant has earned three stars. It was a wonderful dining experience that I would love to revisit on a special occasion. ☺️
