I visited Unagi Uomasa, just a 1-minute walk from Yotsugi Station, for the first time. This reservation-only unagi specialty restaurant has many signed memorabilia adorning its walls! The nearby Yotsugi Station features a Captain Tsubasa theme, complete with a soccer field, statues, and signatures, including one from the creator, Yoichi Takahashi, who has also visited Unagi Uomasa.This restaurant is well-known among unagi lovers, having received multiple awards, including the prestigious "Top 100 Unagi Restaurants" and the Tabelog Award Silver.【Ordered Menu】- Unaju (grilled eel over rice) and liver soup, served with crispy bone chips, liver wasabi, and pickles.The bone chips were crispy and fragrant, while the liver wasabi had a rich, sticky umami flavor with a hint of bitterness—delicious!The skin was crispy, the meat was thick and well-marbled, tender and fluffy, and the sauce was perfectly balanced—not too sweet, with a savory soy flavor. The rice was moist and fluffy, soaking up the sauce beautifully!Since its establishment in 1980, the restaurant has been using a special sauce made with Wakayama-grown grape pepper.The specially ordered live eel is prepared to highlight its natural flavors and textures, going through a meticulous process of cutting, skewering, grilling, and steaming, taking about 40 minutes to cook over Kishu Binchotan charcoal.I definitely want to visit this restaurant again. It was a great meal!
