I enjoyed a lunch course at Hikariya Nishi on the TRAIN SUITE Shikishima. They place great importance on local ingredients, skillfully bringing out their flavors while presenting them beautifully. The meringue-like corn paired with a tomato paste was delightful; the sweetness of the corn combined with the sorbet-like tomato created a wonderful texture that made it easy to eat. Every dish was incredibly delicious, and I definitely want to dine at the restaurant next time.
