I had the pleasure of visiting "Sushi Sanshin" located in Tanimachi Rokuchome, Osaka.This renowned establishment is one that sushi lovers across the country have likely heard of. It has consistently received high praise in the Tabelog Awards, solidifying its status as a representative sushi restaurant in Western Japan. It's no surprise that reservations are difficult to secure, and my anticipation was at its peak before even stepping inside.The interior features a serene atmosphere with only a counter. While there is a sense of tension, it is also incredibly comfortable, creating a wonderful space to focus on the meal.The head chef is quite impressive—not just in appearance, but also in the elegance of his movements and demeanor. Watching him skillfully prepare the fish, cut the rice, and finish the sushi with precise motions is a true display of craftsmanship. Despite his focus on each piece, he never forgets to pay attention to the customers, embodying the grace expected of a top-tier restaurant.On this day, I requested several additional pieces, and each one exceeded my expectations. When I encounter delicious sushi, I often feel the urge to eat more, and the high quality here made it hard to resist that desire.The sushi at Sanshin is relatively large. While smaller pieces have become the trend lately, here you can enjoy the happiness of taking a big bite. Yet, it is never overwhelming; the harmony between the fish and rice is remarkable. It is satisfying without feeling heavy.The rice is cooked a bit firmer, but when you take a bite, it surprisingly fluffs up and the grains dissolve naturally. This exquisite texture is incredibly pleasant, allowing the flavors of the fish to shine without overpowering them. The balance of firmness and softness in the sushi is masterfully executed.The fish is carefully selected from across the country. Each type of fish is treated to bring out its unique characteristics, resulting in flavors that cannot be achieved by simply relying on the quality of the ingredients. The attention to detail in temperature control, aging, and knife techniques is evident in every piece.The appetizers also showcase meticulous craftsmanship. Rather than flashy presentations, the focus is on discerning the ingredients and applying only the necessary techniques. This accumulation of effort elevates the overall quality of the course.What impressed me even more was the calculated pace of the meal. The timing of each piece served, the distance in conversation, and the attentiveness to all customers create an atmosphere that is truly remarkable.Sushi is not completed by technique alone. The space, service, movements, and the very act of dining must come together to create the ultimate experience. I felt that Sushi Sanshin achieves all of this at a high level.I thoroughly enjoyed every addition and left completely satisfied. After finishing my meal, all I could think was, "I want to come back again."Japan has many wonderful sushi restaurants, but Sanshin undoubtedly ranks among the top. The quality of the sushi, the deliciousness of the rice, the chef's graceful movements, and the overall elegance of the establishment all blend together at an exceptional level, making it a true representative of Japanese sushi.While securing a reservation is not easy, the experience is well worth it. For sushi lovers, this is a must-visit establishment to experience this world.It was a great meal!
