I visited the auberge "VILLA DELLA PACE" for lunch, located by the seaside in Noto, Nanao.As I made my way to the restaurant, my anticipation grew, and upon arriving at the breathtaking location overlooking the Japan Sea, I was captivated by the view alone. The serene ocean visible from inside the restaurant was truly spectacular. Time seemed to slow down, allowing me to enjoy a luxurious moment that is hard to find in the city.The concept here is "Noto Kyoge Cuisine." As noted on the menu, the chef has a strong desire to elevate the food culture that has been nurtured in Noto for generations into modern cuisine, connecting it to the future. I deeply resonated with the chef's commitment to express and preserve the food culture of Noto, which is gradually being lost due to population decline and natural disasters.The course began with tomato and gojiru, followed by rock oysters and seaweed, sweetfish with grains, a dish themed around the fields, sweetfish and round eggplant, Jersey beef and abalone, Hodatsu kudzu and watermelon, and concluded with a corn dessert.What impressed me was that each dish not only utilized local ingredients but also expressed the very essence of Noto's landscape. The rock oysters brought the fresh scent of the ocean, the sweetfish evoked the flow of the river, and the field-themed dish conveyed the blessings of the earth, making me feel as if I was traveling through Noto with each plate.The sweetfish and round eggplant showcased a gentle flavor that maximized the natural taste of the ingredients. The luxurious combination of Jersey beef and abalone was surprisingly light, with each element beautifully harmonizing. Throughout the meal, the sincere approach to the ingredients was evident, rather than relying on flashy presentations.Even the dessert was filled with seasonal flavors, and the final corn dish was a delightful and gentle conclusion.Not only was the food exceptional, but the service and atmosphere were also wonderful. Dining while gazing at the expansive sea through the windows was a unique experience. Although it is a restaurant, it truly embodies the essence of a "destination restaurant."While I visited for lunch this time, I felt that staying overnight would allow me to fully appreciate the charm of this place. The value of this auberge includes the time spent enjoying the sunset, sunrise, and the sound of the waves.This is a one-of-a-kind establishment that expresses the nature, culture, history of Noto, and respect for its producers through its cuisine. It was a remarkable experience that allowed me to enjoy not just the meal but also to engage all my senses with the land of Noto.Next time, I definitely want to stay overnight and savor this beautiful scenery and cuisine at a more leisurely pace.It was a great meal!
