I visited "French Ryori Kochuten," located on the basement level 2 of the Mazak Art Plaza in Aoi, Nagoya, for lunch.@kochuten_restaurant This is a renowned French restaurant in Nagoya that I had been curious about for some time. The calm atmosphere allows you to enjoy your meal at a leisurely pace, which is one of its charms. The course for the day started with an amuse-bouche and included:- Semi-cooked Biwa trout with burnt butter sabayon- Today's fresh fish with seasonal vegetables- Roasted Horohoro chicken from Ishiguro Farm in Iwate Prefecture- Today's dessertAmong these, the dish that left a strong impression was the "Semi-cooked Biwa trout with burnt butter sabayon."The Biwa trout was cooked to perfection, allowing me to fully appreciate its moist texture and natural flavors. The accompanying burnt butter sabayon was truly exceptional, enhancing the trout's taste with its rich depth and toasty aroma.Another dish that stood out was the "Roasted Horohoro chicken from Ishiguro Farm in Iwate Prefecture."The cooking technique was also remarkable here. While I could savor the umami of the Horohoro chicken, it was not overly heavy, and the harmony with the sauce was superb.Once again, I realized that the essence of French cuisine lies not only in the quality of the ingredients but also in how the cooking and sauces expand the flavors in multiple layers. Both the fish and meat dishes were crafted to my liking, allowing me to thoroughly enjoy the allure of classic French cuisine. This is a place I would like to visit when I want to enjoy authentic French cuisine in Nagoya at a relaxed pace.It was a great meal! #FrenchRyoriKochuten #Kochuten #NagoyaGourmet
