I revisited after a long time.This time, I tried the salt and soy sauce ramen.Compared to my previous visit, both seemed to have changed slightly in impression.The salt ramen had a beautiful aroma, and I was impressed by the addition of some green, aromatic vegetables.The toppings also felt a bit different from what I remembered; there seemed to be something with a texture closer to bamboo shoots rather than the usual menma.Personally, I preferred the salt ramen from my last visit, but the quality was still very high, and it was refreshing without feeling lacking.The soy sauce ramen had a rounder impression overall.When I had it before, the broth had a sharpness on its own, but when slurped with the noodles, that sharpness really came alive, leaving a strong memory.This time, that sharpness was somewhat subdued; while it was well-balanced, I personally preferred the previous version.That said, there’s no doubt that every detail is meticulously crafted, and each visit reveals a different aspect of the dish.Once again, I was very satisfied, and I truly feel this is a special restaurant.
