【Reservation】I was tasked by a senior colleague to secure a reservation at this restaurant, and after three months of battling every 15th of the month at 10 AM, I finally succeeded! In the first month, I tried 50 times, and in the second month, 150 times before giving up. I read online that you need to call at least 1000 times to get a reservation. In the third month, I was determined. On my 787th attempt, I finally got through!! When I connected, a wave of tension surged through my body. I carefully handled the call to avoid accidentally hanging up.【Dining】Due to the staff being extremely busy, orders for salt dishes, sashimi, and premium cuts can only be placed once at the beginning. Prior arrangements are necessary. We had a group of four: Two men in their 50s, one woman in her 40s, and myself, a 31-year-old man. Here’s what we ordered:▪️Initial Order4 servings of Salted Tongue2 servings of Medium Salted Tongue2 servings of Salted Mino2 servings of Premium Loin1 serving of Sliced Beef Sashimi1 serving of Yukhoe (Korean Beef Tartare)1 serving of Meat Sashimi1 serving of Kimchi Assortment▪️Add-ons1 serving of Egg Soup1 serving of Seaweed Soup2 servings of Large RiceAfter adding drinks, the total came to just over JPY 100,000. Please note that they only accept cash.【Impressions】The most impressive dish was definitely the tongue. I started with the Medium Salted Tongue, and I was already blown away by its quality. I couldn't help but wonder what the Premium Salted Tongue would taste like, my anticipation growing. To put it simply, the difference lies in the amount of fat. If you prefer less fat, the Medium Salted Tongue might be better for you. Even I, at 31, prefer the lighter taste of the Medium Salted Tongue over the fattier version. While it’s good to compare, I should have focused more on the Medium Salted Tongue. I also ordered the Premium Loin, but it wasn’t necessary. For those over 30, the fat can be overwhelming! To truly enjoy the salted dishes, keep the other menu items to a minimum! The Yukhoe and Meat Sashimi were outstanding, while the Sliced Beef Sashimi was average. Overall, I want to emphasize that focusing on the salted dishes while minimizing others is the key to mastering Seiryuuen! Also, securing a reservation requires determination and perseverance. A special experience awaits you on the other side.
