I visited the renowned Sushi Miyakawa, a representative restaurant of Sapporo.On this day, I was particularly impressed by the rich sweetness and lingering flavor of the sea urchin, the abalone that was perfectly cooked to bring out its tenderness and umami, and the beautifully finished kohada (young gizzard shad) showcasing Edo-style techniques.Each piece of sushi highlighted the individuality of the ingredients while achieving a remarkable harmony with the rice, allowing me to savor the joy of perfectly crafted sushi with every bite.With no gimmicks, each piece displayed solid craftsmanship. This course was truly a blend of Hokkaido's abundant ingredients and Edo-style preparation, embodying what makes a restaurant of this caliber.No matter how many times I visit, it always offers new and exciting experiences. I look forward to returning in a different season.It was a great meal.
