This reservation-only establishment has gained immense support from unagi enthusiasts nationwide due to its meticulous approach of preparing and grilling the eels only after receiving an order, showcasing the artisan skills that bring out the full potential of premium unagi.This time, I ordered the exquisite "Unaju" to fully savor the essence of the restaurant.Upon opening the jet-black lacquered box, I was greeted by the sight of large, golden eels beautifully arranged without any gaps, contrasting vividly against the bright vermilion interior. The overwhelming presence and beauty of the dish took my breath away.The eels, grilled slowly over charcoal with far-infrared heat, had a beautifully refined char on the surface, and the rich, fragrant aroma of the sauce wafted up, intensifying my appetite. The glossy white rice peeking out below created a perfect contrast, making it a truly artistic presentation.I eagerly picked up my chopsticks and took a bite. The eel was astonishingly fluffy and tender, with my chopsticks sinking effortlessly into it. As I took a bite, the sweet richness of the eel's high-quality fat and its deep umami flavor melted in my mouth, complemented by the unique smoky aroma from the charcoal.The traditional sauce was elegantly subtle, enhancing the natural flavor of the eel without overpowering it. The expertly cooked, slightly firmer white rice absorbed the sauce perfectly, enveloping me in a blissful sensation with every bite.For an extra touch, I sprinkled some fragrant grape pepper from Kochi Prefecture, adding a refreshing zest that evolved the flavor to even greater depths.The careful grilling with Kishu Binchotan charcoal and the unwavering commitment to quality ingredients shone through, making this the ultimate Unaju that could change one’s perspective on life.The interior exudes a calm and refined Japanese atmosphere, and with the attentive and thoughtful service, I was able to enjoy a special time at a leisurely pace. I definitely want to return when I crave that incredibly delicious, top-notch unagi in the Yotsugi area. It was a great meal!
