Located near the Higashi Chaya District in Kanazawa, Kataori is a wonderful Japanese restaurant that takes full advantage of local ingredients and nearby fishing grounds, offering exquisite dishes crafted by the chef. Michelin-rated with 2 stars in Hokuriku.The seafood, especially, is served fresh and beautifully, without aging, allowing you to truly enjoy its natural flavors.On this day, we had:"Steamed Rock Oysters"The rock oysters from Chirihama are steamed in their own broth, resulting in a beautifully fragrant dish with a melt-in-your-mouth texture. The sweetness and umami spread throughout the mouth, and the slight addition of mustard enhances the oyster's flavors, leaving a refreshing aftertaste."Aji no Ryuhimaki" (Horse Mackerel Wrapped in Seaweed)This dish features fatty horse mackerel wrapped with perilla and myoga in kombu. The kombu adds an exceptional depth of flavor, and the bonito flakes powder on the white cucumber adds a nice accent."Jaga Butter Style"New potatoes are shaped like buns and served with a rich butter and kombu broth sauce.
