I visited Reminiscence in Nagoya, located in the Kurumamichi area. From the first dish to the final dessert, this course was filled with such luxurious ingredients that my vocabulary couldn't keep up.I also opted for the standard wine pairing. The meal started with chips made from kudzu flour topped with sea urchin and seaweed. The sweetness of the sea urchin, the aroma of the seaweed, and the light crunch of the chips created a delightful beginning that raised my expectations.Next was the conger eel, paired with a ravigote sauce, mussels, asparagus, and truffle, offering a refreshing acidity balanced with rich umami. The Japanese sweetfish was prepared two ways: grilled over charcoal and as a croquette, showcasing a fun contrast between the smoky flavor and tender texture. My favorite dish was the red snapper, served with cauliflower purée, white wine sauce, caviar, and milt, creating a delightful explosion of flavors. Despite the richness, everything came together beautifully, and I loved it.The Nagoya Cochin chicken soup was simple yet highlighted the chicken's umami, providing a comforting taste. The grilled eel that followed was paired with octopus and chimichurri, where the sweetness of the fat was complemented by acidity and herbs, leaving a light aftertaste. For the main course, the "Hajime" duck from Toyohashi was impressively tender and flavorful without any gamey taste, leaving me in awe.Even the dessert featuring giant grapes and white peaches was impeccable, and the petit fours at the end were equally delightful.Despite the parade of luxurious ingredients, the overall experience was not overwhelming, which was truly remarkable. Once again, instead of feeling "full," I found myself wanting to go for another round. It was a wonderful course! ✨
