Chef Shimazu, who trained at the renowned restaurant "Ranmaru" in Fudomae, has established himself as a talented chef at the young age of 26. His skillful craftsmanship and attentive service have garnered popularity, and he has now been nominated for Gold on Tabelog, making this restaurant one of the top sushi spots in the country. ■ Menu The only option available is the Omakase course (JPY 38,500). The meal begins with a variety of appetizers, followed by sushi in the latter half. At the end of the course, additional items can be ordered based on the day's offerings. The dishes I enjoyed that day included: - Kyu-e - Octopus - Sweet Shrimp - Sardine - Abalone - Rice with Liver Sauce - Sardine Whale Tail - Firefly Squid - Swordfish - Isaki - Cuttlefish - Seasonal Fish - Torigai - Horse Mackerel - Spring Child - Toro - Akami - Chutoro - Kohada - Sea Urchin - Anago - Tamago - Soup - Ice Cream - Sardine (additional) - Toro-Taku Roll (additional) ■ Impressions This sushi restaurant has been highly praised among food enthusiasts, and I had been curious about it for some time. A close friend, who is a regular here, took me along. Although it was my first visit, there was none of the tension or pressure typically associated with hard-to-reserve restaurants; instead, I felt a comfortable atmosphere. The service level from the chef and the staff, including the proprietress, was high, making it a very pleasant place to dine. The quality of the appetizers at the beginning of the course was impressive, living up to its reputation. One standout was the sardine, which was rich in fat. The carefully prepared sardine melted in my mouth, with the sweetness of the fat and the aroma of the blue fish flooding my senses. Without a doubt, it was the best taste I’ve had in the past few years. The sushi showcased the chef's sincere craftsmanship, with each piece bringing a smile to my face. The cuttlefish had an exquisite texture, the torigai had a pleasant sea aroma, and the kohada had a sharp, well-defined shape—each was of top-notch quality.
