Reservation from my last visit.The smoked bonito served on-site was aromatic and incredibly tender. The sea urchin parfait was delicious, but the nigiri with purple sea urchin was simply outstanding! The preparation of the scallops was remarkable, with a texture that was genius! The same goes for the salmon roe; the cooking here by Obana-san is truly brilliant!!It was a great meal!
