A few weeks ago, I made a dinner reservation.Since the restaurant is a bit far, I took a taxi from Gifu Station. This place is a luxurious gem, set in a renovated traditional house with a lovely garden that even features a tea room, where you can enjoy a delicious dinner. Here’s what I had today:◯ Hida Beef Mini Burger ◯ Salmon with Summer Vegetables ◯ Black Wagyu Tongue and Hida Beef Pâté with Consommé Jelly ◯ Consommé Soup ◯ Scallop Gratin ◯ Sautéed Kinmedai (Golden Eye Snapper) with White Wine Sauce ◯ Crab Cream Croquette ◯ Buntan (Pomelo) Granita ◯ Hida Beef Chateaubriand Beef Cutlet The Hida Beef pâté was incredibly juicy, bursting with flavor as I bit into the delicious burger. The consommé soup was made with broth from Matsusaka, Kobe, and Omi beef, offering a beautifully rich and deep flavor. The gratin featured Hokkaido scallops and liver sautéed in butter, perfectly complementing the creamy taste of the dish. It paired wonderfully with a heavier white wine. The crab cream croquette was lavishly made with about 90% hairy crab, delivering a rich crab flavor. The Hida Beef Chateaubriand cutlet was tender and simply delicious, with a pleasantly crispy coating. The rich brown sauce was packed with umami and depth, pairing excellently with the Bordeaux red wine I had chosen.Sitting by the window, enjoying the beautiful garden while watching the outside scenery darken, I truly had a wonderful time savoring the exquisite dishes at Yoshoku Tsubaki.I definitely want to visit again. It was a great meal!
