《Order》Premium Ramen [Shoyu] JPY 2,200Budo Sansho JPY 100TableCheck Reservation Fee JPY 390─────On a humid Friday in late August—Weekdays only.I made a reservation through TableCheck starting at 8 AM the previous day. The reservation slots fill up quickly, and the times I was aiming for were disappearing fast (sweat). However, I managed to secure a time that seemed feasible.I arrived two minutes before my reservation time, but there were no available seats. Since there were others waiting inside, I thought I would wait indoors, but they asked me to wait outside instead. Reluctantly, I had to wait outside in the sweltering heat.What caught my attention during this exchange was a person sitting near the entrance who kept staring at me. Even though they were talking to the owner, their gaze was more focused on me. They seemed to be a regular, almost like a groupie. They appeared to have finished their meal, yet they continued chatting with the owner about topics like Korea and instant ramen.I entered the restaurant four minutes after my reservation time. This place, like many others, is only open on weekdays, and making a reservation is quite challenging. Unsure if I would return in the future, I decided to order the premium option. I had read in other reviews that the Budo Sansho was delicious, so I decided to try that as well. Although there were seats available at the end of the counter, I was seated in the middle, which was disappointing.After placing my order, I waited for a while when a young customer next to me suddenly exclaimed, "How much is the Ajitama?!" They seemed shocked that their order didn’t include the flavored egg. In response, the owner said, "We don’t serve Ajitama," but it was listed on the menu for the ramen. It seems they probably don’t offer it as a separate item on the ticket machine.Seven minutes later, my bowl arrived. The flavor of the broth was dominated by the sansho, making it hard to discern the original taste. I wondered if it could have been served separately. As it was my first visit, this felt like a misstep. However, the sansho had a lovely aroma.It seems the owner respects the late Sano Minoru, as the noodles reminded me of those from "Shina Soba-ya" and his disciple's shop "Sugimoto." However, I felt these noodles had a bit more bite compared to those.The chashu included three slices, including one that was seared. The seared chashu was particularly aromatic and incredibly delicious!Underneath the chashu, I found an Ajitama and two wontons hidden away. The wontons were likely "meat wontons" and "shrimp wontons." They had a smooth texture and the filling was firm, providing a satisfying experience.Overall, there was more food than I expected, making it quite filling.The young person next to me, despite being slender, was ordering multiple dishes. It must be expensive, but I envy their ability to eat a lot without gaining weight (laughs).As I was leaving, I caught a glimpse of the owner's good nature through a small interaction, but I felt a bit cramped with the owner's strong focus on his regulars and their loud conversations. The ramen was incredibly tasty, but I wished for a quieter dining experience.By the way, at the time I entered, there were only two of us, including myself. After that, no new customers arrived. Even with the groupie-like person, there were hardly more than three people in the restaurant at any given time. They might be adjusting the number of reservations based on the time to avoid delays. No wonder it’s hard to get a reservation.
