I finally made it to SAWADA in Osaka, a place I had wanted to visit for a while!Since I learned about it, I had been eager to go, and I was finally able to make a reservation through OMAKASE.The restaurant is close to Fukushima Station, but since my hotel was around Kitashinchi that day, I decided to take a taxi instead of the train for convenience.There were about 8 counter seats.The chef seemed very kind and had a wonderful personality, which made me feel comfortable right from the start.I learned that the dishes are prepared with minimal seasoning, relying on the natural flavors of the ingredients. Every dish was delicious, but the dashi was particularly outstanding.The way they served the hamo (pike eel) was different from the usual style, which was a pleasant surprise, and it was incredibly tasty.Recently, I feel like young chefs are offering seasonal ingredients in unique ways, and they tend to be delicious. It might be because they have confidence in their dishes, even when they deviate from tradition, and this was no exception.The most shocking dish of the day was the ayu (sweetfish) ramen. I was amazed by its flavor, and it reminded me of the ramen-loving character Serizawa from the manga "Ramen Discovery" and "Saiyuki."I couldn’t help but think that if Serizawa were to create a ramen using ayu niboshi (dried sweetfish), it would taste something like this.This ramen was incredibly delicious, and adding rice made it even better.Due to rising ingredient prices, I’m not sure if they will continue this next year, but it really hit the spot for me.Overall, from the atmosphere to the meal, it was a flawless and wonderful restaurant.
