I had the pleasure of attending a gathering hosted by Hiroshi Ishikawa, who is highly regarded by sushi enthusiasts, at Sushi Saitou. The overwhelming quality reflected the pride of Saitou, while the warm atmosphere created by Ishikawa's personality made for a truly captivating experience.The refined and beautiful Japanese space was a delight. Standing at the counter, Ishikawa greeted guests with a gentle smile and attentive care. His remarkable ability to transform the tense atmosphere of a renowned establishment into a surprisingly relaxed and vibrant ambiance showcased his exceptional character. Whether a first-time visitor or a regular, every guest felt grateful to be there, thanks to the top-notch hospitality.The dinner course, crafted with carefully selected seasonal ingredients, was the epitome of luxury. Each appetizer was prepared with meticulous attention to the optimal temperature and cutting technique, allowing the natural sweetness and aroma of the ingredients to burst forth with every bite. The pairing with drinks was superb, beautifully heightening the anticipation for the sushi.The nigiri, created with fluidity by Ishikawa's hands, was stunning. The traditional rice of Saitou was perfectly cooked, with each grain standing firm and delicately falling apart the moment it touched the palate. The balance of acidity and saltiness complemented the richness and umami of the toppings.Particularly striking was the tuna, which displayed a beautiful gradient and had its flavors meticulously extracted to the utmost. The moment it melted in harmony with the rice was pure bliss. Each piece was flawless, and the elegance and high level of craftsmanship left me in awe.Not only did I get to savor the pinnacle of sushi techniques with all my senses, but I also immersed myself in the charm of the wonderful craftsman, Ishikawa. While there are many places to enjoy delicious sushi, none offer such a fulfilling and luxurious experience. I am grateful for the fortune of being part of this special occasion and eagerly look forward to my next visit.
