Its color, luster, and aroma were all impeccable.As for the taste, the savory aroma of soy sauce combined with a refined sweetness and the rich umami of the eel created an unaju that stands out from other eel restaurants. This unaju ranks among the top three I've ever had. Truly remarkable.The most distinctive feature was the "melting eel"; the fat was perfectly rendered, allowing the eel and rice to blend harmoniously in my mouth, making me naturally exclaim, "Delicious!"
