I may have forgotten to take some photos, but I found a restaurant in Ehime that I want to visit again!The cold pasta with ayu, melon, and tomato in a gazpacho style was incredible. It had a flavor I’ve never experienced before—absolutely delicious!The eel was also top-notch. I had never experienced such a crispy exterior and fluffy interior.Additionally, the Tortelloni in Brodo (consommé soup with wild pheasant from Kihoku) that the owner mentioned is actually a topic of debate.This dish was sublime.The golden soup sparkled beautifully. When I tasted it, I could sense a hint of the wild pheasant. But it wasn’t an unpleasant aftertaste.I’m not sure if I’ll see the owner again when I revisit or if I might run into them in Kobe, but I’m definitely glad to have discovered a restaurant I want to return to. I hope to visit again at night next time!
