I visited Nikuya Tanaka in Ginza.As I sat at the counter, I was greeted by a magnificent block of Matsusaka beef and its certificate of authenticity. This alone heightened my expectations.The course was not solely focused on meat; it was structured to incorporate seasonal seafood and vegetables. I thoroughly enjoyed delicate dishes featuring ocean treasures like crab and abalone, as well as seasonal vegetables, making it a true Japanese culinary experience despite being a meat kaiseki.And then came the star of the show, the Matsusaka beef. Each cut showcased a unique marbling pattern, and the live cooking right in front of me was exceptional. Even the waiting time while watching the flames of the grill felt like a treat.The grilled meat had a beautifully charred exterior and a lovely rosy interior. With each bite, the rich flavor of the beef spread across my palate, and the fat was sweet without feeling heavy. I appreciated being able to enjoy it with a variety of seasonings like salt, wasabi, and soy sauce.What stood out the most was the black truffle. Generously shaved, its aromatic impact was outstanding. The combination with the high-quality beef was pure luxury.The presentation of each dish was stunning, from the final rice course to the pickles and dessert, with no detail overlooked. It was clear that they paid attention not only to the lavishness of the ingredients but also to the cooking techniques, combinations, and presentation.
