This restaurant made me rethink what Japanese cuisine truly is, beyond its Michelin three-star title.What impressed me the most was its culinary philosophy of maximizing the inherent flavors of the ingredients without relying on dashi made from kombu or katsuobushi. Each dish had remarkably clear flavor profiles, and the depth of taste emerged from stripping away the unnecessary.As seen in the photos, the presentation was extremely minimalistic. Yet, every detail—from the choice of dishware to the use of negative space and seasonal leaves—was meticulously calculated, making each dish feel like a work of art. The ayu (sweetfish) was expertly cooked to bring out its aroma, with a striking contrast between the crisp skin and delicate flesh.The grilled dishes and soups respected the individuality of the ingredients, adhering to an aesthetic of subtraction rather than addition.The rice served at the end was perfectly cooked, with each grain standing out and the natural sweetness of the rice shining through. Even the dessert showed no compromise, reflecting the meticulous construction of the entire course.I was amazed at how such profound emotions could be evoked using only the ingredients, cooking techniques, salt, and water, without flashy presentations or extravagant ingredients. The serene atmosphere of the restaurant, along with the natural and pleasant service from the chefs and staff, further enhanced the immersive experience of the meal.
