I recently enjoyed a seasonal course meal after quite some time.The first dish was an appetizer beautifully presented in a shell. It featured fresh shellfish served with chopped ginger, highlighting the natural sweetness and texture of the ingredients. The refreshing appearance heightened my anticipation for the rest of the course.Next was a chilled jelly made with summer vegetables like edamame and onions. The transparent jelly was stunning, and the flavors of the vegetables combined with the gentle dashi broth filled my mouth with a delightful freshness—perfect for the hot season.For the fish course, a beautifully grilled fillet was paired with a sauce made from plenty of chopped herbs. The savory aroma of the grilled surface harmonized well with the sauce, making it a dish that left me craving rice.Following that was a meat dish with a beautifully charred exterior. The thick cut of meat was tender and lavishly topped with truffles. It paired excellently with the rich sauce, making it one of the standout dishes of the day.Another meat dish was elegantly finished with a glossy glaze and delicate garnishes, all brought together with a refined sauce. Not only was it visually stunning, but it also offered a comforting, gentle flavor.Overall, the course was thoughtfully composed to bring out the natural flavors of the ingredients rather than being overly flashy, allowing me to experience the essence of the season in each dish. The careful selection of tableware and presentation added to the enjoyment, making it a feast for the eyes as well as the palate.I savored every bite without losing interest, and I look forward to trying another course when the seasons change.
