I successfully made a reservation and visited the restaurant. I arrived 10 minutes early, purchased my meal ticket, and checked in. I ordered the wonton salt ramen for JPY 2450, the wonton soy sauce chashu ramen for JPY 3000, and the vegetable rice for JPY 730. *I will review the soy sauce chashu ramen in a separate post.The soup was elegantly crafted, with a rich umami flavor from a blend of high-quality chicken and various types of kombu, complemented by a mild saltiness. The noodles were familiar, with a smooth texture reminiscent of nyumen, perfectly lifting the flavorful broth. The wontons came in two varieties: chicken and pork. They were designed to highlight the natural flavors of the meat, with a wonderfully silky skin. The low-temperature cooked chashu had a subtle smokiness, allowing the meat's inherent taste to shine through. The addition of white shredded leeks was a nice touch.The vegetable rice was quite unique for a rice bowl, featuring the natural sweetness of steamed vegetables that paired well with the ramen broth, making it easy to finish quickly due to its deliciousness and warmth.While the salt ramen was of high quality, it was generally within the expected range of deliciousness compared to the soy sauce ramen, which I will review in another post.
