To wrap up Golden Week, I visited my favorite restaurant, Den.Spring is the season for wild vegetables, and they have plenty of them!◯ Den MonakaBlueberries, smoked daikon, and miso-marinated foie gras.The combination of berries and foie gras is simply perfect!◯ Tempura of Koshiabura and Tara no MeEven if I've had these before, I can't explain why, but these are on a whole different level—it's truly mysterious.◯ Aori Ika and AsparagusRefreshing with sudachi, and the asparagus is rich in flavor and absolutely delicious.◯ Den TakkīMiso rice with fukinoto and koshiabura.The bitterness and aroma of the rice pair perfectly with the umami of the chicken.◯ Sashimi of Yaito Hata with Nori Vinegar and WasabiThis Yaito Hata has an incredibly deep flavor!It has a sweetness from the fat, but it’s also bursting with amino acids!!Super delicious.◯ Smoked Masu Trout with Akakogomi and KoshiaburaThe smoked trout is packed with flavor.The deep-fried wild vegetables add a wonderful texture, aroma, and bitterness, making it incredibly tasty.◯ Den Salad - A Look at the FieldsOn this day, the highlight was the daikon seed pods, which are said to be from before they turn into seeds. They had a concentrated daikon aroma and spiciness that was interesting.All the separately seasoned vegetables were truly delicious, especially the potatoes, which were extraordinarily sweet.But my favorite was definitely the yellow beets at the bottom!◯ Beef Strip Loin and Wild VegetablesDelicious broth, wild vegetables, and sweetly cooked strip loin.It was absolutely the best...◯ Clay Pot Rice with Shirasu and Flower SanshoI had been wanting to try rice with flower sansho, so I was thrilled!!The gentle balance that only flower sansho can provide, which you can't get with shirasu or regular sansho, was a victory!!Of course, I had three bowls! And three bowls of red miso soup too!The red miso soup was fantastic, changing from funori to green onion tofu to wild garlic!◯ Dessert - Kumamoto Watermelon and Strawberry KakigoriThe rum jelly paired wonderfully with the purple shiso, which was quite a surprise.This combination is amazing!It was incredibly delicious!!◯ Futaba-chan's Banana CakeA heavy, buttery banana cake!The aroma of cinnamon and banana made for a wonderful finish!Honestly, every time I come here, it’s incredible.It’s truly one of a kind!It was a great meal!
