It has a gentle flavor with a deep, rich taste."Ichiban Dashi"The delicate aroma of bonito combined with the refined umami of kombu kelp spreads across the palate. A pleasant aftertaste lingers for a while."Unagi no Wan"A bowl featuring rare natural eel from Fukui and winter melon, which is hard to find at this time of year. The deliciousness is once again experienced amidst the lingering flavor of the ichiban dashi."Otsukuri"◯ Sweetfish◯ OctopusServed with salt, wasabi, or chili vinegar."Shiro Ebi no Isobe Age""Yaki Ayu"Served with a dipping sauce made from Japanese pepper. I was shown how to remove the bones on the spot and for the first time, I removed the bones from the ayu myself."Uni Somen"Somen noodles topped with uni (sea urchin) from Fukui, covered with a camellia leaf."Hamo no Shin Tamaki"A dish rolled with hamo (pike eel), perilla leaves, and burdock, wrapped in fried tofu skin."Manju Nasu no Kurumi Miso Dengaku""Akai Ika no Ruibe"A dish featuring thinly sliced akai ika (red squid) sorbet on top of kintoki grass. Although I’m not usually fond of sorbet, the one from Kataori was exceptionally delicious. The temperature and texture were perfect, and it paired wonderfully with the kintoki grass."Yose Tofu"A dish of yuba (tofu skin) with turban shell and lily bulb, garnished with sweet shrimp."Gohan"The first serving is white rice. Accompaniments include "Shigureni Beef," "Nameko Miso Soup," and "Pickles."
