I finally visited Quintessence, a place I've wanted to go for a long time! Every dish was incredibly delicate, showcasing the ingredients beautifully. The goat's milk bavarois, which was also served at Grand Maison Tokyo, had the perfect balance of olive oil, milk, and saltiness, complemented by the textures of lily bulb and macadamia nuts—it was absolutely delicious. The white asparagus and akagai (red clam) were simply too good... Next time, I definitely want to reserve a private room!
