I had the opportunity to visit a renowned yakiniku restaurant in Kiyosumi Shirakawa. The place has the classic appearance of a yakiniku restaurant. As many reviews have mentioned, the salt-grilled dishes are on a different level. The salted tongue, outside skirt, and mountain chain tripe were delicious enough to eat for a lifetime! Perhaps it was also due to my companion's grilling skills, but combined with the powerful heat of the roaster, the meat quickly developed a beautiful Maillard reaction. The texture, fat, and aroma were all top-notch...I used to think that mountain chain tripe needed a dipping sauce to mask its strong flavor, but that’s not the case at all. I was amazed at how much umami could be experienced with just salt and lemon. The egg soup was also excellent, but if you're not a fan of spicy food, I recommend the red version. It was the best yakiniku experience!
