At "Torila" in Hirao, Fukuoka, there are three time slots available: 5 PM, 7 PM, and 9 PM. However, it seems that only regulars can book the 7 PM slot, so I always go for the 9 PM start. The owner really gets into the groove at this time, and I quite enjoy it! The course begins with a selection of appetizers, followed by skewers. The summer vegetables and chicken served in a glass dish, topped with a refreshing jelly, offer a delightful start with the tanginess of the tomato and the fragrance of shiso. The tataki is rare yet the skin is perfectly crispy, bursting with flavor with every bite—truly impressive. The hand-rolled chicken with rich egg yolk and rice is also delicious and elevates the mood! The skewers are cooked to perfection; the negima showcases a wonderful contrast between the crispy skin and the juicy, tender meat. The wings are grilled to a delightful crispness, highlighting the sweetness of the fat, while the half-cooked quail eggs and heart, served with ginger, are cooked just right to bring out the natural flavors of the ingredients. The owner was lively and engaging, making for a fun and delicious dinner! I will definitely come back!
