Sushi Saitou may not be my absolute favorite among the Saitou-style sushi, but this was my second visit, and the reason remains the exceptional quality of the fish.The standout for me was the tuna. The marbling in the chutoro and otoro was truly beautiful, and I rarely see tuna with such finely textured and evenly distributed fat at other places. The moment it touched my palate, the umami and sweetness of the fat were simply outstanding.The overall quality of the nigiri was consistently high, and for my last order, I confidently requested the kanpyo maki with extra wasabi once again. It was a simple yet satisfying way to conclude the meal, allowing me to savor the lingering essence that is characteristic of Sushi Saitou. Together with the exquisite tuna, it turned out to be another fulfilling day.
