I unexpectedly had the opportunity to be seated at Kataori, which is often regarded as one of the best restaurants in Japan, and I quickly arranged my Shinkansen ticket to head to Kanazawa.Kanazawa was already experiencing the peak of summer heat, but it did not disappoint, offering a truly wonderful culinary experience. The dishes, made with seasonal ingredients, were not overly extravagant, yet each one showcased delicate techniques and meticulous craftsmanship. The flavors of the ingredients were brought to life in a way that was uniquely Kataori.The expression of seasonal elements was particularly impressive, allowing me to fully enjoy the charm of ingredients that can only be tasted at this time of year. Each dish was a revelation, making me feel that the journey to this restaurant was truly worthwhile.Although it is not often that I have the chance to visit such a place, this experience has become truly unforgettable. I look forward to the day I can return.
